Peppermint & Coconut Bark Thins

In the spirit of the holiday season, I wanted to share a healthy macro-friendly recipe that can serve as a quick snack or as a delish dessert… “Peppermint & Coconut Bark Thins.”
These beauties are gluten, sugar and nut free, vegan and vegetarian friendly. They’re loaded with yumminess and the peppermint adds a touch of Christmas flavor to bring you good childhood memories!

Peppermint & Coconut Bark Thins
Gluten, Sugar and Nut Free, Vegan, Vegetarian
Ingredients
- 3 Cups Coconut Flakes (unsweetened)
- 2 Tbsp Coconut Oil (melted)
- 1 Tsp Peppermint Extract
- 1/4 Cup Chocolate Chips (unsweetened) / (optional)
Instructions

In a food processor, add coconut oil and coconut flakes, and blend for 5-10 minutes – stopping occasionally to scrape sides. Blend until smooth and buttery consistency.

Pour the peppermint extract and blend until combined.

Line a rectangular glass casserole with parchment paper and spread a thick layer of the mixture (about ½ in.). Top with chocolate chips and press them down into the mixture.

Place casserole in the freezer until the mixture is solid – about 1-3 hours. Break into small pieces. Store in refrigerator.
