Fall in Latte Chewy Cookies
Another week, another healthy recipe coming your way.
As you probably have noticed, Christmas season is almost here. But before saying goodbye to autumn, let’s satisfy our sweet tooth with these “Fall in Latte Chewy Cookies.”
Because everybody loves a good macro-friendly cookie recipe, right?
These cookies are very easy to make and you’ll feel in heaven after every bite (at least I do).

Fall in Latte Chewy Cookies
Gluten-free, Lactose-free
Ingredients
Batter:
- 1/2 cup Pumpkin puree
- 1/3 cup Almond butter (smooth)
- 1 Egg (refrigerated)
- 2 tbsp Espresso powder
- 2 1/8 cups Almond flour
- 1/2 tsp Baking soda
- 2/3 cup Truvia baking blend
- 1 1/2 tbsp Pumpkin spice
- 1/4 tsp Sea salt (fine grain)
- 2 tsp Vanilla extract
Frosting:
- 2 tsp Lemon juice
- 1 tbsp Coconut oil (soft)
- 3 tbsp Maple syrup
- 2 tsp Vanilla extract
- 1 tsp Pumpkin spice
- 1 tsp Cinnamon
- 1 cup Peanuts
Instructions
Frosting:

Blend peanuts in a food processor on high speed until smooth. Add remaining ingredients until creamy. Chill in the refrigerator until ready to use.
Cookies:

Preheat oven to 350 degrees and in a large bowl mix egg, almond butter, pumpkin puree, Truvia, and vanilla until smooth.

In a separate bowl add almond flour, espresso powder, pumpkin spice, salt and baking soda.

Gently combine dry and wet mixture until dough forms (it will be dry and sticky). Chill for 20 minutes in the refrigerator.

Scoop with cookie scoop the dough into two baking sheets. Press down each cookie ball into half the thickness (they won't spread too much in the oven).

Bake for 10 minutes. Remove from the oven and let them rest for 5 minutes before transferring to a cookie rack to cool completely.

Spread 1 tbsp of frosting on each cookie and sprinkle with cinnamon for extra cuteness.
